Choose an approximate 1.0 pound piece of either hot or sweet. It will be shipped individually vacuum packed and should be cut very thin for serving after deli string has been removed.  Continue to refrigerate after opening in a ziploc bag with as much air removed as possible.  Will keep for several weeks unopened, and about one week after opening.
